Tomato Soup
A nice creamy tomato soup. The butter can be replaced with olive oil.
Servings:
Ingredients
2 onions
3 tsp olive oil
2 tsp butter
0.5 tsp basil
0.5 tsp thyme
1000 g crushed tomatoes
1.5 dl white wine
3 dl water
2.5 cubes vegetable fond
1 clove garlic
4 tsp sugar
2.5 dl cream
salt and pepper
Preparation
Dice the onions.
Heat a wok.
Add olive oil or butter.
Add the onion, basil and thyme.
Let fry for a little bit, until the onion gets the slightest bit of color.
Add the wine. Let it boil for a little while.
Add the tomatoes, olive oil, fond, and water.
Crush the garlic into the wok.
Let it all boil for 20-30 minutes.
Blend the soup (leave some chunks).
Add cream and let boil for another 50-10 minutes.
Add pepper.
